I had so much fun making the twins’ 2nd birthday cake. About a year ago, I fell in love with this cake and knew that I had to make something similar. The rock candy makes it super fun and the clean white fondant keeps it simple. So, here is a quick look at how I made this cake come together Christen-style:
1. Duncan Hines to the rescue!
I love their classic white cake mixture because the egg whites keep the cake from getting too heavy. I also ended up using their Orange cake mixture (totally by accident..I’ll get to that) too for my bottom layer of birthday cake. Since the orange taste was only on one layer, it gave a subtle fruity flavor to the entire cake; making it perfect for a spring party.
2. Food coloring time.
Once the cake batter was mixed, I divided my cake into two bowls.
Then, I followed the instructions on the food color box as to how many drops of food color I should use for each layer. My inspiration for different layers is here.
Having different layers was the big “surprise” and I thought it just enhanced the whole let’s-eat-a-lot-of-sugar event. As you can see, I originally used two boxes of white cake mix and made four different layers. Well, my pink layer looked too close to the purple so I tried to add more food coloring and make it orange. It ended up being a yucky color so I used my orange cake mix as back-up. Such a happy accident!
3. Ice, Ice, Baby. As I’ve mentioned before, I usually freeze my cakes and take them out of the freezer just before I dirty ice them. For my icing, I stuck to Nan Nan’s classic white frosting. If it ain’t broke, don’t fix it, right? I had to make three servings of this recipe to cover the entire cake and have some left-over for attaching the rock candy. (I began icing the cake two days before the party).
4. Fondant Time. Since I wasn’t using any special colors, I made life a little simpler and used boxed white fondant. I rolled it out on my counter top, using confectioner’s sugar so it wouldn’t stick. Once it was big enough, I used my rolling pin to pick it up and roll it onto the cake. Then, I used my handy-dandy fondant smoother (find it at your craft store in the cake aisle) to smooth it out. Of course, I had a couple of spots that were a bit bumpy but I knew I could cover those up with the rock candy. Raleigh did tell me that he thought I had improved on this technique
5. Rockin’ the Rock Candy.
Y’all this looks so much harder than it was. All I did was break up 2-3 rock candies in each color and I put them in separate bowls. I started in the not-s0-smooth parts and applied a thin layer of my frosting to the cake. Then, I started with the larger pieces of rock candy on the bottom and just made my own designs depending on where the fondant needed to be covered up. I alternated the colors and varied the height. This was the fun part and did not take nearly as long as I thought it would.
6. Party Time!
The cake stayed in the refrigerator until just before the party began. I found these super cute candles to top it off. The twins loved the rock candy (they actually started eating it while we were singing Happy Birthday) and everyone enjoyed the twist of different colored layers. It was so fun to see my girls get into eating cake this year. Now, what should we do for next year?
